I went shopping yesterday, planned to buy some Archway raspberry cookies to have with my evening coffee, and plain forgot.
Around 7pm, I’d been done with dinner a couple hours and wanted a treat. Well, I have flour butter & sugar, and this small can of crushed pineapple…
(Every so often I buy ham salad from my local deli. I’ll add a couple tablespoons of crushed pineapple to it, really ups it’s game.)
Pineapple Buttercake Squares
- 3/4 cup flour
- 1 cup sugar
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs
- small can Dole crushed pineapple with juice drained
- 2 teaspoons powdered sugar
1. Put 1 stick softened butter, 1 cup sugar & 2 eggs in large mixing bowl.
2. Use a hand mixer and cream them up good. (The Rival hand mixer my grandma gave me in 1984 died last year, this Hamilton Beach mixer is brand new with some pretty big beaters and other attachments like a whisk) 

3. Sift the flour, salt & baking soda together. Add them to the mixing bowl and use that mixer again.

4. Drain the juice from this small can of crushed pineapple into a glass to drink later, and plop the pineapple into your bowl.
DON’T use the mixer; blend the pineapple into your batter with a spoon.
5. Preheat the oven to 350F and spread the pineapple batter into a greased square 8x8 or 9x9 pan. (Mine is 9x9.) Bake for 30 minutes.

7. Sprinkle powdered sugar on top. Forget the coffee, this calls for cold milk!
These are very dense & very moist; I’d recommend using a fork. And don’t worry about them being too sweet, they’re more buttery than anything. The powdered sugar on top made them just right.

DeleteThat looks really good! I made a large peach cobbler for my husband the other day with some canned peaches I found in the pantry. He finished it in record time. I wish I had his metabolism! I'd have gained 5 pounds instantly if I ate as much of it as he did!

What happens is usually okay.
However, I don’t mind if someone else makes a cake for me.

DeleteYou sure have a flair for desert making, Doug! I picture you wearing an apron and a tall white chef's hat. Wish I could have a little slice of that fab looking cake with a cup of tea. I made a batch of chocolate covered peanut balls last week. So-o-o good!!! Also so-o-o bad!!! (sugar-wise) And I've been experimenting with making my own soy milk lately. Tricky to get the formula just right. ❤️🦉

ReplyDeleteI have been thinking about my answer about my son-in-law. I think I made it sound pretty depressing and dismal. It's hard to believe it has been five years. So - the first year he got progressively worse. Took a one year absence from teaching and remained in his basement. He and my daughter had just started dating. He gradually tried to return to the classroom, but it didn't work out. He had great insurance and went to every specialist under the sun (this was before long covid was a thing and anyone specialized in it). By year two they had separated as he dealt with his health issues and wanted to be alone in his basement with his headaches. Year three he began treatments with the clinic he found that treated long covid. He also was able to find the work from home job writing curriculum with the same insurance and flexible hours. He and my daughter began seeing each other again (she doesn't like crowds and stuff so his avoidance of places gave them something in common). Christmas 2023 they became engaged, got married in March 2024 and bought a wonderful house this summer. He has been feeling better and better since 2023 and we think a lot of his fears of driving, going out of town, going out in public are due more to his fear than the actual fact of getting an incapacitating headache in public. And it has been a good long while since he had one. As a mother of two small children, she has dragged him along to trunk or treat, school plays, open houses, t-ball games, soccer and tennis lessons. And he is just a wonderful father to my grandchildren. Things are almost normal, like I said, I think what remains is an occasional headache and mostly fear.
Miss Merry, I really appreciate you sharing all this. It didn't sound so depressing or dismal on the previous post, but did concern me a good bit, I'm having a tough time with this, I'm in Month 14 and thought it should be long over now. Very glad things worked out (mostly) for your daughter and SIL. I'm basically getting no treatment--everything I've done this past year didn't really do much--so I'm just biding my time and taking advantage of the good days, few & far between. But I do feel hopeful, thank you again.

DeleteOh-Oh, Dug... I'm another that isn't fond of pineapple (although the fresh pineapple we had in Hawaii was pretty good). DH loves pineapple and pineapple upside down cake. He would love your cake too. I do make a peach dump cake that is extremely easy and a favorite of all 3 of us. But I think your creativity in creating something with what you have on hand for your evening coffee (or milk) is worth celebrating. Enjoy!

(I just got home from the senior center, but on my way home I stopped and picked up another can of this crushed pineapple) :^) I hope nothing happens to you for Chuck's sake (or mine) but you'd be surprised how much boxed & canned stuff I eat daily. I just get the urge sometimes to improvise--and yes I am hoping Florence shares those chocolate balls too. Fingers crossed. :^)
