Tonight’s dinner. (Tonight is a relative term, I eat between 4:30-5pm.)
On the menu is my “Oven Baked but tastes like Fried” chicken (psst my secret is smoked paprika and my recipe can be found right here), cucumber slices with a creamy homemade dressing (mayonnaise, sugar, vinegar, cracked pepper & minced onion) and finally buffalo rice with a splash of hot sauce & red peppers.
I usually reserve my cooking for the weekend and have much simpler fare Monday thru Thursday, but it’s been so chilly and gray today, and then I heard about the passing of Loretta Lynn and fried chicken (or my version of it) just felt right.

Looks wonderful! (Never tried hot, spicy rice before.) My Dad used to make sliced cukes, sliced onions in vinegar, some water and sour cream, and let them marinate forever. Linda in Kansas

DeleteOh gee... Now you've made my mouth water. We're having left over curry with tofu, kim chee, pickled ogo (seaweed), kamaboko (fish cake) and a green salad. This is the 3rd night. We're very lazy cooks and make food that will last for a few days. But... now... what to eat for tomorrow....

DeleteYour chicken reminds me of "Shake and Bake" (S&B) meals. My mother used to do S&B pork chops and chicken. I've never heard of smoked paprika. I'll buy some and try your recipe. I'm sure the S&B product is full of preservatives. Your recipe is much better. It's cool and raining so I made hearty chicken vegetable soup.

DeleteI could eat a huge bowl of those cukes but am not sure how I would handle the spicy rice. Some kinds of spice I deal well with, others not so much. I will probably have a bagel with cream cheese and some veggies with ranch dip. I'm lazy!!

DeleteCukes with onions in vinegar and sour cream were on the table most nights in the summer, when the cucumbers started coming on.

DeleteThe boys had ham with a butter, brown sugar, and honey glaze and Knorr's cheese and broccoli rice with extra cheese and applesauce. I had half a sweet potato, broccoli, and applesauce. Your dinner looks good.

ReplyDeleteJoyce that's a good question--if it was the weekend I would've made enough for leftovers, but I didn't today. As for your peanut butter & banana dinner, ha that's my favorite breakfast! But since you had a big lunch, it makes sense. :^)
DeleteHad my usual and boring finger food night. Sliced banana and apple, string cheese and crunchy granola bar. I am really intrigued by your chicken Doug and will try it. I think you ought to write a bachelor or maybe a cooking for one cookbook. There is a need and your recipes always look so good.

DeleteIt looks yummy! I'm having homemade burgers, (beef mince, crushed garlic, beaten egg, black pepper, tomato sauce, worcestershire sauce, dried parsley, stuffing mix), no bun just the patties, and a green salad (red & Green lettuce, cucumber, tomatoes and Italian dressing).

DeleteAlways enjoy your food posts. Were you a Loretta Lynn fan? We took my mom to visit Butcher Holler about 10 years ago, it was fun, but mom was more of a Willie Nelson fan. Country music is not my genre but I liked Loretta, loved the movie! We were out all day yesterday so had ham sandwiches for supper; gotta do better today. ;-) It was interesting to read in the comments what everyone else was eating.

To be honest I'm not a big country music fan, but I did grow up in the 1960s and '70s in a very rural area and have a huge appreciation for country performers like Loretta Lynn and Willie Nelson. How awesome that you took your mom to Butcher Holler! 🙂

ReplyDeleteYou supper looks delicious. Last night we had tortellini with sauce I had made with tomatoes from the garden, salad and for dessert fruit salad. Just an everyday supper. On the weekends I will do more. Just not much time by the time Chuck gets home from work. Love reading everyones comments!

DeleteWe are just having mashed potatoes with hamburger gravy, one of Tim's favorites. I am cutting up roasted squash for the freezer and we will have zucchini sauteed with peppers and onions to finish off the zucchini from the garden. I have a pot of lentil soup started for tomorrow, the ham, celery and onions simmering to make a nice broth.

DeleteI have my main meal at lunch time, and just a snack in the evening (a bit of cheese, some baby tomatoes).
ReplyDeleteMy meal yesterday (as it’s early morning as I write) was steamed white fish (Orange Roughie in this case) cut into small pieces, thinly sliced garlic, spring onions (green onions to you), ginger grated on top and some snow peas all in a Chinese bamboo steamer. A “sauce” made from Teriyaki sauce, sesame oil, soy sauce and Mirin.
Steamed for five or six minutes.
Take that to the table and serve yourself over some rice.
Peter, thank you for sharing--that sounds so good and quite doable. (I was just looking at teriyaki sauce at the market today too, I'm not kidding.) If I make this I'll blog it and give you the credit! :^)
