Early yesterday morning I went to the market (reserved for seniors only until 9am, but I get in with my white hair) and saw a stockboy setting up a large red display case of RICE-A-RONI at the end of one aisle.
Two things came to mind:
1) My blogger friend Bonnie uses Rice-a-Roni when she makes stuffed peppers.
2) I’m 60 years old and have never—NOT EVER—eaten a morsel of Rice-a-Roni.
How could that be? If you were around in the 1960s & 1970s, their commercials aired nonstop and still play in my brain:
Rice-a-Roni, the San Francisco Treat! Rice-a-Roni, the flavor can’t be beat!
I decided to throw a couple boxes in my cart, the Chicken Flavor & ‘Stir-Fry with Asian Seasonings’.
After I got home I thawed two skinless, boneless chicken breast halves—sprinkled ‘em with kosher salt and ground pepper and put them in a pan with 2 tablespoons of canola oil.I cooked on medium heat for 6-7 minutes, then flipped both pieces and cooked another 5-6 minutes. Done!Okay, how do I make this Rice-a-Roni… it says to saute the rice & vermicelli in 2 tablespoons of butter until golden brown.Add the Asian seasonings and 2 cups of cold water. I’ve never seen so much steam in my life! “美国电机及电子工程师协会!” (That’s “aieeee!” in Chinese)I reduced the heat, covered & let simmer for 10 minutes. I than added my cooked chicken breast (sliced), 1 chopped onion and 1 cup frozen broccoli florets. Put the lid back on and let it simmer another 10 minutes. Here’s the finished product and it smells incredible. There must be 5 lbs of food here!
That made it even tastier.

DeleteHi Doug, I'm so happy you enjoyed this and thanks for the mention! You must have read my mind because I also do stir fry with it almost just like you did here. It's good isn't it? I have used it with cut up pork, chicken and even ground beef. They have a lot of flavors but the two you got are our favorites, especially the stir fried flavor! Sometimes I'll even add sliced almonds to it. This is my go to meal when I don't have time to do a lot of prep work and yes, it is economical which we all need these days! 😊💗

Well, I should've known my impromptu stir fry has been done before, but for myself it was still a delicious surprise. Slivered almond sounds good I'll be looking for that, but I want to make meals with these not just side dishes 😋👍

DeleteWell, I must join the group that have never tried rice-a-roni, but do remember the jingle! However, we do use Knorr Rice Sides - which are packaged rice and pasta in different flavors. We use the broccoli and cheese one quite often. And it's only 98 cents a package and does make a lot. And your meal looks delicious... and healthy!
ReplyDeleteAnother one! I have seen Knorr pasta, I'm sure my market has the rice version too. Well, the Rice-A-Roni was $1.79 a box, but on special for 99 cents when that stockboy was setting up the display. When it goes back to regular price, I'll look for yours. Thank you Rian! 🙂
DeleteI like to add sliced mushrooms and a small amount of chopped onions into the Ricearoni. Years ago when I first ate it , it actually had almond slivers in it included in the box. Your chicken dish made with it and added broccoli looked really good.

DeleteWe have Rice-a-Riso here and I always thought it was exactly the same thing, but yours has vermicelli and ours has rice shaped pasta called Risoni. It is a good product though. I don't eat it as often as I used to. The sweet red pepper would be a nice addition.

DeleteHi Doug, I will join the never had rice-a-roni group! Maybe more of an American thing. We have Dainty Rice here in Canada which may be similar. Inexpensive, I know my brother lived on it in university.
ReplyDeleteYour recipe is very similar to one I make with veggie chicken slices. I usually toss any vegetables that are in the crisper to use them up. It makes lots so we have it for a couple meals.
