Until my next post is ready, here's some food from this weekend

I hope everyone (who celebrates it) had a nice Easter.  I wasn't going to post these pics of my Easter weekend dinners, I am actually close to finishing up a new blog-post about my neighbors.  But I couldn't resist.

Forgive my boasting, but this was a delicious meal.  Just because you live alone doesn't mean you have to go without!  These were the best scalloped potatoes I've ever made (the secret is to drop a quartered onion into the pot and let them slow cook forever) and also the creamiest devilled eggs I've ever made.  I always get the mayo-mustard ratio wrong.  They'll never be this good again.

Finally--I'm in serious love with this ham.  It used to be sold only twice a year for Christmas & Easter, but you can now get it year-round at Kuhn's.  It's a spiral cut, roasted red pepper pineapple juiced ham.  I love it on a buttered roll with a little bit of ketchup.  

Oh darn it, nothing for dessert but some chocolate cookies but I'm stuffed anyway.

As long as I'm here, I wanted to show you what I had for dinner Saturday night while watching The Ten Commandments.

Last week my friend and former classmate Pen (we grew up on neighboring farms) told me she was making sloppy joes to take to a church dinner but had to make them from scratch as she had no Del Grosso sauce in her cupboard.  

She also made them with deer meat instead of ground beef, which she assured me were quite tasty.  Well, we both grew up with venison in our diets, so this wasn't surprising.  I told her I was glad her sloppy deer joes were a big hit.

It did inspire me to make them this weekend (but beef for me, not deer).  I think Gia Russa makes the BEST Sloppy Joe sauce.  I add a tablespoon of brown sugar and a tablespoon of minced green pepper.  Perfect, every time.

This is what real friendship is--I sent Pen this pic of my Sloppy Cow Joe, and said "What's wrong with this picture?"   She answered "Well, that isn't Squirt soda in that glass, but that doesn't make this wrong."

She was absolutely right--Kuhn's was out and I had to settle for cranberry ginger ale instead. 😊

  1. Hi Doug! You are making me hungry. I haven't had sloppy joes since I was a kid. Reminds me of food we ate in the 1950's and 60's. I remember my mom making hotdogs, sliced the long way and filled with cheese, and then wrapped in bacon. Yum! I'm feeling my coronary arteries slamming shut 😅.

    1. Thank you Carole, but this is amazing--back in the 60s my mom used to make the very same hot dogs!! Haha about the arteries but now you have me wanting one of those :^)

  2. That ham looks like what my local butcher sells as “Champagne ham” which is really good (although I’m sure it’s not prepared with red pepper and pineapple juice)
    Having it with ketchup though, oh no! Dijon or English hot mustard is the go (for me).

    Our lunch, while not watching The Ten Commandments (it was an episode of High Potential), was rack of lamb, potatoes Romanoff (takes quite a bit of preparation, but it’s worth it) and asparagus.
    With that I dug out an old (1984) Wynn’s “John Riddoch” cabernet sauvignon I had lying around.

    That’s an interesting way to cook potatoes – I must try it.

    Sloppy Joes aren’t really a thing in this neck of the woods.

  4. I enjoy seeing what others eat and your dinners are always so scrumptious. I haven't had Sloppy Joes for decades. I think my mom used to make them!

  5. YUM - Your sloppy joe looks delicious and I am drooling over the potato salad! I am a big squirt fan but cranberry ginger ale sounds great too!
    Your Easter Dinner is fabulous! That ham - I can almost taste it through the screen. Did you buy a whole ham? Leftovers to freeze? You are right. I use ingredients but not measurements for deviled eggs. When the ratio is perfect - love it!
    I'm glad you cook for yourself - you are worth it! I have friends that order door dash, etc because "it isn't worth cooking for just one". I disagree. It took a lot to downsize cooking for 7 to cooking for two, but we are worth it - nothing like a homecooked meal.

The ham was very very little, about 1.25 lb. but I have a lot of leftovers from both dinners!   9. Hi Doug, your meals look delicious! The last time I made scalloped potatoes they were not very creamy, must try to make them again.Now I want devilled eggs! Glad you had a nice Easter.   10. Hi Dug! We just got back from the Easter weekend in the Hill Country with our daughter and her family. Will post a few pics later, but sounds like you had a good Easter... food looks great. I think you do eat well. I had pecan crusted salmon, fried spinach and a cauliflower risotto at a restaurant Easter Saturday. It was really good. Easter Sunday we just did a family brunch... and sat around and talked. It was too raining, windy, and cold Sunday to sit out on their porch. Can't wait for your post about your neighbors... ; )

  11. Glad to see you were able to celebrate Easter with a delicious lunch. Our daughter's church served lunch after Easter service. One of the items was duck. I had never eaten duck before and I can tell you, I'm never eating duck again. It is not to my liking. I don't even eat much chicken so I should have known duck would not be something I would like.

    For Easter dinner our family went downtown San Mateo to Saigon City and had Vietnamese food.

  12. Oh my, your dinners look delicious. I'm assuming you eat lots of leftovers too, as I'd find it difficult to make just enough for one or two people.
